O οφθαλμίατρος χειρουργος Δρ. Μενδρινός Ευστράτιος αποφοίτησε από την ιατρική σχολή του Πανεπιστημίου της Λιέγης στο Βέλγιο με Μεγάλη Διάκριση. Ειδικεύτηκε στην οφθαλμολογία επί 4 έτη στο Πανεπιστημιακό Νοσοκομείο της Γενεύης (Hopitaux Universitaires de Genève)στην Ελβετία όπου παράλληλα απέκτησε και τον τίτλο του Διδάκτωρ της Ιατρικής Σχολής του Πανεπιστημίου της Γενεύης μετά τη διατελεση της διδακτορικής του διατριβής.
Στη συνέχεια εργάστηκε ως επιμελητής (chef de clinique) στο Τμήμα Παθήσεων & Χειρουργικής αμφιβληστροειδούς, υαλοειδούς και ωχράς κηλίδας στο Πανεπιστημιακό Νοσοκομείο της Γενεύης υπό τη διεύθυνση του παγκοσμίου φήμης χειρουργού οφθαλμίατρου καθηγητή Κ. Πουρναρά, δίπλα στον οποίον απέκτησε μεγάλη εμπειρία στη έρευνα, διάγνωση και θεραπεία των παθήσεων του βυθού του ματιού. Κατά της διάρκεια της θητείας του ως επιμελητής ασχολήθηκε ιδιαίτερα με τη βασική έρευνα πάνω στις αγγειακές παθήσεις του αμφιβληστροειδούς και υπήρξε εξεταστής των 5ετών φοιτητών του Πανεπιστημίου της Γενεύης στο μάθημα της Οφθαλμολογίας.
Ολοκλήρωσε την εξειδίκευση του στη χειρουργική αμφιβληστροειδούς, υαλοειδούς και ωχράς κηλίδας (vitreoretinal surgery fellowship) στο Πανεπιστημιακό Νοσοκομείο του Λίβερπουλ (Royal Liverpool University Hospital), Αγγλία υπό τη διεύθυνση του διεθνούς επίσης φήμης χειρουργού οφθαλμίατρου Prof H. Heiman.
Είναι συγγραφέας 35 άρθρων σε διεθνή επιστημονικά περιοδικά καθώς και 18 κεφαλαίων σε αγγλικά και γαλλικά βιβλία οφθαλμολογίας και έχει πάνω από 90 παρουσιάσεις σε ελληνικά και διεθνή συνέδρια οφθαλμολογίας
Είναι κάτοχος του Ευρωπαικού διπλώματος οφθαλμολογίας (European Board of Ophthalmology) και έχει βραβευτεί για τις επιστημονικές του εργασίες σε διεθνή συνέδρια. Επιπλέον είναι κριτής (reviewer) για άρθρα υπό δημοσίευση σε ξενόγλωσσα επιστημονικά περιοδικά οφθαλμολογίας.
Ο χειρουργος οφθαλμίατρος Δρ. Μενδρινός έχει συμμετάσχει ενεργά ως co-investigator σε διεθνείς πολυκεντρικές μελέτες (Excite, Mont Blanc, Cabernet, VIEW2) οι οποίες καθιέρωσαν τη σύγχρονη αντιμετώπιση της ηλικιακής εκφύλισης της ωχράς κηλίδας (ΗΕΩ) με τη χρήση ενδουαλοειδικών ενέσεων anti-VEGF. Είναι ειδικός στην διάγνωση και θεραπεία της ΗΕΩ καθώς και άλλων παθήσεων του βυθού του ματιού όπως απόφραξη αρτηρίας και φλέβας του αμφιβληστροειδούς, διαβητική αμφιβληστροειδοπάθεια, οίδημα της ωχράς κηλίδας, κεντρική ορώδης αμφιβληστροειδιπάθεια, και στη χειρουργική αντιμετώπιση του καταράκτη με τη τεχνική της φακοθρυψίας , αποκόλληση αμφιβληστροειδούς, οπή ωχράς κηλίδας, επιαμφιβληστροειδική μεμβράνη, αιμοραγία αμφιβληστροειδούς κ.ά με τη σύγχρονη τεχνική της ελάχιστα επεμβατικής (χωρίς ράμματα) υαλοειδεκτομής
